Crispy & Savory Black Bean Burgers With Avocado Mayo



My Black Bean Burger recipe has been tried and tested on vegans, meat- eaters and children. The results are always the same. Everyone always asks for seconds. 

Black Bean Burgers
Serves 2

15 ounces of cooked Black Beans ( canned or fresh black beans )
1 large green pepper, chopped fine
1 onion, chopped fine
½ cooked potato, minced
¼ cup of cornmeal ( add ½ cup, for  crispy texture)
1 tablespoon of sea salt
1 tablespoon of paprika
1 tablespoon of pepper
1 tablespoon of BBQ sauce
6 tablespoons of Olive Oil ( other cooking oils or sprays may be substituted)
¼ cup water

Tools:
Fork
Spatula
Skillet (non-stick)

Black Bean Burgers. Add 3 tablespoons of Olive oil to a skillet. Add more oil, as needed. Heat the skillet over medium fire. Add Onions and Green Peppers, cook until tender (softened).

Mash black beans with a fork or your hands.

In a bowl, combine onions, green peppers, sea salt, paprika, pepper, BBQ sauce, cornmeal, potato and mashed beans. Add water as needed. Start with a ¼ cup of water. If mixture is dry, add water, little by little.

Use a spoon to stir the mixture. Once the mixture is thoroughly stirred, use your hands to roll mixture into balls. The size of the balls should match your bread.

Add 3 tablespoons of olive oil. Add more oil, as needed.  Heat skillet over medium fire. Add balls to skillet, allow balls to cook for 20 seconds then flatten with your spatula. Cook until brown then flip. Cook the other side until brown. Drain on paper towel.

Avocado Mayo
1 softened Avocado, mashed
¼ cup of unsweetened Almond Milk
1 teaspoon of lime juice
1 teaspoon sea salt

Avocado Mayo. Add mashed avocado, almond milk and lime juice in a bowl, mix with a spoon until smooth. Add to Black burgers.
